Ingredients

1 cup breadcrumbs
1 onion, chopped
1/2 red pepper, sliced
1/2 cup cremini mushrooms (about 4 or 5)
1 tomato, chopped
1 cup baby carrots
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
1 egg
1 (12 ounce) package extra firm tofu
1 tablespoon grated Mozzarella Cheese
4 ketchup packets
1/2 cup sharp Cheddar cheese
1 (14.5 ounce) can crushed tomatoes

Directions
Preheat an oven to 350 degrees F
Place the onion, red pepper, mushrooms, fresh tomato, garlic, carrots, and salt and pepper into a food processor. Process until the vegetables have been pureed.
Add the egg, half of the tofu tofu, and Mozzarella cheese; process.
Remove tofu mixture and put into a bowl, add remaining tofu by crumbling in your fingers. Add breadcrumbs and stir well. (Adding larger chunks of tofu rather than pureeing all of it helps the texture)
Mix until evenly incorporated and the mixture is firmer.
Form four separate "loaves" and place in greased 9x13 pan.
Sprinkle tops of loaves with paprika.
Bake in the preheated oven for 50 minutes, then top with 1 teaspoon ketchup on each loaf, then cheddar cheese and canned crushed tomatoes. Continue baking until the cheese melts and the crushed tomatoes are hot, about 20 minutes more.
