Ingredients

    -2 chicken breasts, poached and then chopped
    -1 can black beans
    -1 can chicken broth, low sodium
    -6 cans water
    -1 T chicken bouillion
    -3/4 c. dried or canned kidney beans
    -1 small diced red bell pepper
    -1 small or half a large onion
    -1 c. uncooked brown rice
    -1 tsp. tabasco or other hot sauce
    -2 cloves fresh garlic, minced
    -salt and pepper to taste
    -cayenne pepper, cumin, chili powder, and cilantro to taste
    -juice of one small lime

Directions

Put all ingredients in a large slow cooker and stir them up. Cook on high for 3 hours, stir well and taste seasoning--add more to taste if desired. Then cook on low an additional 3 hours. Top w/low fat sour cream, cheese, or any desired topping if you like! Enjoy!
