    Jennie-O Extra Lean Ground Turkey, 20 oz
    1 15 oz can Black Beans
    1 cup chopped onion
    1 red bell pepper and 1 green bell pepper, chopped
    1 cup frozen sweet corn kernels
    8 large Iceberg lettuce leaves
    2 Avocados - peeled and seeded with flesh mashed.
    1 Tbsp of lime juice
    1 Tbsp finely chopped fresh cilantro
    Mexican Seasonings (Garlic powder, onion powder, chili powder, ground cumin, cayenne pepper, and any other seasoning you desire to achieve the desired flavor)


1. Saute peppers and onion then set aside.
2. Brown turkey in pan.
3. Add beans and corn for a 2 minutes, then add peppers and onions.
4. Season with desired seasonings.
5. Mix garlic powder, onion powder, salt, lime juice and cilantro into the mashed avocados to make guacamole.
5. Fill each lettuce leaf with a scoop.
6. Add a spoonful of guacamole to each lettuce cup.

Makes 4 servings, 2 filled lettuce leaves per person.
