Ingredients

    Beef shanks with marrow
    Carrot
    Celery
    Onion
    Garlic cloves
    Red wine
    Beef stock
    Stewed tomatoes
    Garlic powder
    Onion powder
    Marjoram
    Oregano
    Salt & pepper
    Olive oil

Directions

Heat Dutch oven on stove top
Add olive oil
Pat dry & salt and pepper the shanks
Sear shanks for 4-6 minutes on each side
Remove & set aside
Add onions, carrots, & celery (chopped fine)
Cook until softened, add garlic
Add red wine & reduce on high heat for 10 minutes. Add stewed tomatoes & spices and herbs. Cook a few more minutes.
Add beef stock, bring to boil.
Pre heat oven to 325.
Add shanks, and reduce heat to simmer.
Once oven is preheated, put covered Dutch oven in. Cook 3-4 hours
Makes 4 servings.
