Introduction

Number of Servings: 8

Ingredients

    1 cup Quinoa (dry measurement), cooked
    1 can Black Beans, rinsed and drained
    1 cup Corn, fresh or frozen
    8 Scallions, chopped
    2 Baby Cucumbers. sliced
    10 Grape Tomatoes, cut in half
    1 Bell Pepper, chopped
    Fresh Cilantro

    Dressing:
    3 tbsp Olive Oil
    2 tbsp Lime Juice
    1 tsp Red Wine Vinegar
    1/2 tsp Cumin
    Salt and Pepper to taste


Directions

Cook quinoa. In a large bowl, combine all ingredients. Mix dressing separately and pour over top. Stir. Serve immediately or store in refrigerator. Recipe is very flexible and many varieties of fresh veggies can be used. Enjoy! Makes 8 servings.
