Introduction

These tacos are vegetarian (use rice cheese to make vegan), easy and so delicious. These tacos are vegetarian (use rice cheese to make vegan), easy and so delicious.
Number of Servings: 4

Ingredients

    extra virgin olive oil (2 tbsp, est)
    1 large eggplant, washed and cubed (skin on)
    1 packet taco seasoning of choice

    Taco toppings (assumed in cal content per serving):
    2 Garden of Eatin' Blue Corn taco shells
    1/4 c Kraft Mexican Blend Shredded cheese
    1/4 c chopped tomato
    1/4 c avocado slices
    1/4 c shredded lettuce
    shredded lettuce

Directions

Prep eggplant, cutting into tiny cubes.

Heat olive oil in large pan. Add eggplant and stir frequently until eggplant is soft and cooked through (may need to add a little more oil to keep from sticking, depending on how large eggplant is).

Add taco seasoning per package instructions (usually add w water). Mix throughly and let flavor settle in.

Prep tacos as desired. Enjoy!
