Introduction
I made this up to go on some tilapia filet tacos that we had for dinner. I absolutely loved it and will definitely make it again! I made this up to go on some tilapia filet tacos that we had for dinner. I absolutely loved it and will definitely make it again!Number of Servings: 10
Ingredients

1 c. black beans (canned or homemade)
1 c. frozen sweet corn
1 c. chopped fresh mangos
3 tbsp. chopped fresh cilantro
1/4 c. lime juice (about 3 limes)
1 tbsp. finely diced green onions
3 cloves minced garlic
1 medium red bell pepper, finely chopped
1 tbsp. olive oil
salt to taste
Directions
Chop all ingredients as instructed and set aside. Heat oil in a large skillet and add the red peppers, onions and minced garlic. Cook until peppers begin to soften and onions are lranslucent. Add the remaining ingredients and cook until wram through, adding salt to taste. Enjoyo! Goes great on fish tacos, or as a dip with chips. Serve warm or cold.
