Ingredients

    1c dry Quinoa
    2c water
    1T Curry Powder
    1t Cumin
    1/2 t Red Pepper
    Pinch of Salt
    3 med Carrots, Chopped
    1 can Garbonzo Beans
    3 Green Onions
    2 Granny Smith Apples, Chopped
    1/4 c Pine Nuts, Roasted
    Parsley
    2T Olive Oil
    1T Lemon Juice

    Salad Greens

Directions

Cook Quinoa in water and spices for 12 mins...or until all water is absorbed. Add remaining ingredients and mix well. Serve on Salad Greens....1c Serving Size.
