A fast healthy breakfast for busy days! A fast healthy breakfast for busy days!
Number of Servings: 1


    1/2 cup egg whites
    1/4 cup sliced mushrooms
    1/2 cup fresh baby spinach leaves
    1/8 cup low fat grated mozzarella cheese


Saute mushrooms & spinach briefly in a non stick frying pan. Pour in egg whites & reduce heat slightly.
Sprinkle with cheese when bubbly and mostly firm, fold over and cook one more minute on each side.
