Introduction

This is a modified version of a recipe that David Lore used to bring to our Quaker potlucks (before our meeting-place went vegetarian). It is a quick, good-tasting dish which makes a great dinner when paired with a spinach salad. Ingredients

    12 oz lite tuna
    2 cans cream of mushroom soup, healthy version
    2 cups frozen or canned peas
    2 oz tortilla chips (about 22 chips), crushed


Directions

1. Pre-heat oven to 375 degrees F.
2. Mix together all the ingredients in an oven-safe dish.
3. Add more chips to top if you want, but that will add calories.
4. Bake for 25 minutes.
5. Let cool for a few minutes.
6. Enjoy!

Serving size is 1 cup. This recipe makes 4.75 servings. Freezes well for taking as lunch the following week or month.
