Introduction

I used red potatoes for this recipe but feel free to swap them out. Also, I used dried herbs and onions because that is what I had and what time allowed. Number of Servings: 6

Ingredients

    4-5 Large Red Potatoes (about 2.5lbs)
    1 cup Jack Cheese
    1/4 cup bacon bits
    1 cup fat free half & half
    2tblsp dehydrated onion flakes
    ground black pepper (to taste)
    garlic powder (to taste)
    dried basil (to taste)

Directions

1. spray a small rectangular pan with pan spray
2. Slice potatoes thinly
3. Place one layer of potatoes in pan, slightly overlapping
4. season with pepper, onion flakes, garlic powder and basil as desired
5. Top with 1/2 of the cheese and bacon bits
6. Repeat steps 3-4 for second layer
7. Top with final layer of potatoes, season top layer as desired.
8. Pour in half & half
9. Bake at 350 for approx 25-30 mins

Makes approx 6 servings
