    1 cup whole grain Penne
    1 tsp Olive Oil
    1/2 cup Fresh Broccoli (chopped)
    1/2 cup chopped red bell pepper
    1/2 cup chopped tomatoes
    2 cloves garlic
    1/4 tsp ground thyme
    3 Tbsp chopped parsley
    3/4 cup crumbled feta cheese (light feta - I use Ziggy's light)
    1/4 tps black pepper


Cook the pasta according to box directions.

Use a non-stick cooking skillet and cook the broccoli, oil, bell peppers, tomatoes, garlic and thyme together, constantly stirring until the veggies are tender.

Add the cheese to the veggies and cook while stirring for about 2 minutes more, until the cheese melts. Then add the pasta, pepper and the parsley. Mix and serve.
