Ingredients

1 cup all purpose flour
1 cup wheat flour
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup ripe,mashed bananas
3/4 cup cooked,mashed sweet potato
1/3 milk
2 large eggs
6 tablespoons unsalted butter, melted and cooled slightly
1 teaspoon vanilla
1/2 teaspoon cinnamon
Directions
Makes 12 regular muffins or 36 mini muffins
Bake at 375
Mix together in a large mixing bowl the flours, sugars, baking powder, baking soda, salt and cinnamon.
In a medium bowl mix the mashed bananas and sweet potatoes, milk, eggs, melted butter and vanilla.
Lightly fold the banana mixture into the dry ingredients, just until combined. Do not over mix.
Scoop into greased muffin tins. Bake 20-23 minutes for regular muffin size or 12-14 minutes for mini muffins. let cool in pan 5 minutes. Remove and cool on rack. Eat warm or cool completely and store in sealed container for three days. Can be frozen too.
