Number of Servings: 1


    * Flax Seed Meal (ground flax), 3 tbsp
    * Egg, fresh, 2 medium
    * Baking Powder, 1 tsp
    * psyllium husks, 1 tbsp
    * Vanilla Extract, 1 tsp
    * agave nectar, 2 tsp
    * Salt, 1 dash


Mix ingredients together in a bowl; psyllium should be last. Let sit for about 5 minutes so that it thickens slightly. Fry in oil/fat of your choice.

Should give 2 or 3 pancakes. The nutritional info given is for the whole mixture.

Add dried fruit like apples or apricots or berries. You can then reduce the amount of agave nectar by half.

Add vegetables like spinach and omit the nectar to give a savoury pancake.

If you're worried about calories, you can use 1 whole egg and 2 egg whites instead.

You could also use a non-calorific sweetener like stevia or sucralose.
