Ingredients

    3/4 c natural peanut butter (creamy or chunky)
    1/4 c margarine
    1/2 c maple syrup
    1 tbsp water
    1 tsp vanilla extract
    1 1/2 c whole wheat pastry flour

Directions

Preheat oven to 350*F. Grease baking sheet. Combine peanut butter, margarine, syrup, water, and vanilla; cream. Add flour and mix until dough forms soft ball. Roll dough into 1" balls. Arrange ~2" apart on baking sheets and flatten with fork in criss-cross pattern. Bake 12 - 15 minutes, until edges are slightly browned. Transfer to wire racks to cool.

Variation: before flattening with fork, roll ball tops in large-crystal sugar. Flatten and bake for a crunchy top.
