    Approx. 1/2 large turkey polish sausage, boiled for awhile to remove fat.
    1 medium zucchini, chopped
    1/2 medium onion, chopped
    1 cup egg beaters (approx. 3-4 eggs)
    1 cup low fat ricotta cheese
    1 tomato, sliced
    1/8 cup shredded cheddar
    basil, salt and pepper to taste


Boil the turkey sausage for at least 30 minutes ahead of time, to get rid of some of the fat. Chop the zucchini and onion, brown in a pan, and add to a casserole dish which has been sprayed with cooking spray. After sausage has cooled for a few minutes, cut into small pieces. Place sausage on top of the vegetables. Mix egg beaters and ricotta cheese and pour on top of meat and vegetables. Top with the tomato slices and sprinkle with salt, pepper, basil and shredded cheese.

Bake at 350 degrees for approx. 30 minutes.

Makes approx. 6 servings.
