Ingredients

    1/4 tsp freshly groung black pepper
    3/4 tsp dried oregano
    1/2 TBSP Extra Virgin Olive Oil
    3/4 TBSP Lemon juice
    1.5 cups peeled, diced cucumber
    3/4 cup canned black eyed peas (rinsed & drained)
    1/4 cup Crumbled Fat Free Feta Cheese
    1/4 cup thinly sliced raw Red onion
    1 cup Cherry Tomatoes, diced

Directions

Whisk together olive oil, lemon juice, oregano, and black pepper in a bowl until well combined.
Add cucumber, black eyed peas, feta, onion, and tomatoes.
Toss to coat.
Can be served at room temp or chilled.
