    1 cup plain, nonfat yogurt
    1 can chicken broth (low sodium preferred)
    1/2 cup chopped cucumber
    1/4 cup chopped bell pepper
    1/4 cup chopped green onions
    1/4 cup green olives with pimento, sliced
    1 small can sliced black olives, drained
    White pepper to taste


Place yogurt in a mixing bowl and stir until smooth. Whisk in the chicken broth. Add rest of ingredients and mix well. Cover and chill for at least 4 hours. Stir before serving and garnish with croutons.

This version is half of the original recipe and yields 3 servings. Feel free to double for a larger batch.

Nutrition info used regular chicken broth not low sodium so the counts may be off if you use low sodium broth.
