    4 large potatoes
    2 cups shredded broccoli
    4 cupslow sodium chicken broth
    2 cups 2% sharp cheddar cheese
    1/2 cup Fat Free evaporated milk
    1 T corn starch
    1/4 cup water


1)Peel potatoes and cut into cubes.
2)Shred 2 cups broccoli in food processer.
3)Boil potatoes and broccoli in chicken broth until tender.
4)Add evaporated milk and cheese and simmer for 10 minutes stirring occasionally to avoid scorching.
5)Mix 1 tablespoon corn startch in 1/4 cup of cold water and then add to soup to thicken. Continue to stir until thickened.

Makes 8 servings of 1 cup each.
