Ingredients

    2 cup dry rolled oats
    2 cup lowfat buttermilk
    6 mashed bananas
    4 egg white substitute
    0.5 cup applesauce
    0.5 cup splenda brown sugar
    1.5 cup wheat flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt

Directions

Soak oats in buttermilk for 1 hour. Spray the muffin pans with baking spray. In a mixing bowl, combine mashed bananas, egg substitute, applesauce, and brown sugar and mix well. In another bowl whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir in the walnuts. Fill muffin cups 2/3 full and bake at 400 degrees for 20-25 minutes.
