Introduction

Veggie-filled pasta salad with no added fat! With no mayonnaise, it's a perfect picnic food. Veggie-filled pasta salad with no added fat! With no mayonnaise, it's a perfect picnic food.

Ingredients

    1 box whole wheat pasta
    2 cucumbers, chopped
    2 carrots, chopped
    1 stalk celery, chopped
    2 ears corn
    1 cup green beans
    1 cup cherry tomatoes, halved
    5 pieces sun-dried tomatoes
    1 can water-packed artichoke hearts, drained and cut small
    1 cup fresh parsley, chopped small
    1 cup fresh cilantro, chopped small
    4 tbsp rice wine vinegar
    5 tbsp lemon juice
    cracked pepper

Directions

Cook pasta according to directions. Drain and let cool.
Steam green beans, let cool.
Cut corn off of the ears (yes, you can eat it raw).
Combine remaining ingredients, chill in the fridge until eating.
