    1 Cup Couscous, cooked
    1 Roma Tomato, chopped
    1/4 cup yellow onion, chopped
    1 Large Cucumber, peeled and chopped
    1/4 cup Parsley, chopped
    1/2 Lime, Juiced
    1 Tbsp olive oil


Cook couscous. Let cool. Add all ingredients into couscous adding the olive oil and lime juice last.

Makes about 8, 1 cup servings.
