    3 cups butternut squash, cubed
    1 large onion, chopped
    3 cloves garlic, chopped
    2 cans Hunts Fire Roasted diced tomatoes
    3 cups Trader Joes "Healthy 8 Chopped Veggie Mix"
    2 cups chicken broth
    2 cups water
    2T Lipton Onion Soup mix, dry
    1 cup Quaker Quick Barley
    salt/pepper as desired


I have a Wolfgang Puck pressure cooker that has preset times and settings...

Spray pressure cooker pot with cooking spray and set to meat setting. Add onion and garlic, saute until translucent. Clear heat setting, add remaining ingredients, cover, and set to soup setting, increasing time to 15 minutes.

Unplug machine and allow pressure to dissipate on it's own.

Makes (10) 1-cup servings.
