When Ham's on hand and hungry too. When Ham's on hand and hungry too.
Number of Servings: 2


    4 large eggs.
    2 Tbsp. Heavy Whipping Cream.
    1 C. diced/shredded ham, hickory smoked preferred.
    1/2 C. Sharp Cheddar Cheese, shredded.
    1 Tbsp. Chives.
    1/4 C. diced cooked Yellow Squash and Zucchini.

    *PAM spray to prevent sticking prior to cooking!


Leftover Cooked Ham and vegetables, place into hot preoiled skillet and turn occasionally until warmed through and slightly browned.

Meanwhile, place eggs into a bowl with Cream and whip into a froth, gather the chives and cheese in preparation to place onto the Omelette's when they are just about firm.

When ham and vegetables are done to your liking? Divide the mix into 2 Equal Portions! Pour the egg mixture estimating amount for 2 servings, about 1 Cup. Tilt your skillet to distribute the egg mixture throughly and evenly as possible. Place onto the medium heat setting of the stove top and when almost firm add the chives and cheese, again dividing into 2 servings. Fold the one half over the other with a Spatula and let set for a minute or so, the flip to the other side, to brown and heat evenly. Slide onto a plate as soon as done to your liking and if needed you can Microwave for 20 seconds to ensure doneness without burning.

Repeat steps for remaining Omelet and enjoy!
