Number of Servings: 12


    1.5 cups instant potato flakes
    1.5 cups boiling water
    2 Tbsp. oil
    1 tsp. salt
    1 cup flour
    1.5 tsp baking powder


Combine the potato flakes and boiling water in a bowl. Add the oil and salt - stirring well.
Add the flour and baking powder and mix to make a soft dough.
Heat pan/griddle over medium heat. Pan should be lightly oiled. Shape dough into patties (3in. diameter by 1/2 inch thick). Brown each side and just eat one. Your kids will enjoy the rest as you wait for the food money to come in tomorrow.
Then you can have an apple!
