Introduction

This is standard middle eastern dish as I've had it prepared in the US (unfortunately, I've not had the pleasure to eat it in the middle east). I like it because it's full of flavor but low on calories.

Number of Servings: 9

Ingredients

    Parsley, 1.5 cup, chopped as small as you can (or use a food processor

    Couscous, 2 cup, cooked

    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia), chopped finely

    Olive Oil, 1 1tsp

    Lemon Juice, 1 fl oz (or to taste)

    Cucumber (with peel), 0.5 cup chopped into small pieces

    Celery Salt, .5 tsp

    Cumin 1 tsp

    Add all ingredients and stir gently

Directions

makes 9 half-cup servings. Feel free to serve yourself a double serving of this, the calories are so low!

Optional: more olive oil, raw onions
