My favorite soup of all time! My favorite soup of all time!
Number of Servings: 10


    3 LARGE zucchini (I used 2,000 grams)
    1 medium onion
    3 cloves garlic
    1 T olive oil
    4 cups fat free half and half
    1 can fat free evaporated milk
    1 package chicken gravy mix

    Season to taste: Salt, Pepper, pinch of nutmeg


finely chop zucchini and onion and garlic

sautee in 1 T olive oil until soft

Puree in blender

In large soup pot, combine half and half, evap milk, and chicken gravy mix...add pureed veggies

Season to taste

Let simmer for up to 45 min- 1 hour until all flavors combine

Enjoy hot or cold...makes approx 10 1 cup servings

  • Smells wonderful, tastes very good. I accidentally used too much garlic but it was still tasty. I think I'll make it a bit thicker next time, but it's perfect as is when served cold :D - 8/24/10
