Ingredients

    4 Tbsp. Butter (1/2 stick)
    1 Medium yellow or vidalia onion, sliced
    1/4 cup seasoned flour
    1 lb. boneless, skinless chicken breasts, cut into large chunks
    2 cups chicken broth
    Salt & pepper to taste
    1 Tbsp. fresh rosemary
    1 Tbsp. parsley

Directions

Melt the butter in a large skillet over low heat and saute the onions. Keep the heat very low and stir often; the objective is to cook the onions very slowly to bring out the flavor without browning them. When onions look "melted" (about 20 minutes), remove the onions. Cut chicken into large (2" x 3") chunks and dredge in the seasoned flour. Brown the chicken until golden. Add onions back into the pan along with any remaining flour and cook over medium heat for a minute or two. Add chicken broth and seasonings; cover and simmer until chicken is cooked through and sauce has thickened. Serve over rice, potatoes or egg noodles. Serves 4.
