Number of Servings: 4


    1 c. white rice, cooked
    1 1/4 cups soy milk, rice milk, or other non-dairy milk of choice
    1/3 cup raisins
    1/3 cup brown rice syrup
    1 t. vanilla
    1/2 t. cinnamon
    1/4 t. ground ginger
    1/8 t. ground nutmeg
    2 tbsp. corn starch
    2-3 tbsp. water


In a medium saucepan, combine the rice, milk, raisins, syrup, spices and vanilla. Turn on to medium, and stir until all is mixed. Bring to a boil, and then mix corn starch with cold water. Add to pudding and continue stirring until thickened. Serve hot, warm or cold.
