Ingredients

    2 6-8oz boneless skinless chicken breasts, visible fat removed and deveined
    1 cup whole wheat pasta mini shells
    3 tbsp Brummel & Brown yogurt margarine spread
    3 tbsp Dijon mustard
    1 1/2 tbsp lemon juice
    1 tbsp brown sugar
    2/3 tsp paprika
    Poppyseeds
    Olive Oil
    Olive oil cooking spray
    Fresh ground sea salt
    Fresh ground black pepper

Directions

1. Preheat oven to 400 degrees F.
2. In a small bowl, add butter spread, lemon juice, mustard, paprika, and brown sugar. Add salt and pepper to taste. Cover with napkin and microwave for 45 seconds, or until butter is melted. Mix well.
3. Spray bottom of 9x13 glass baking dish with olive oil spray and place chicken breasts upside down in bottom. Brush mustard marinade over top of each breast with marinade brush.
4. Bake for fifteen minutes. Remove from oven and flip chicken breasts. Brush marinade over top side of breasts and sprinkle with poppyseeds. Return to oven and bake for 15 more minutes.
5. While chicken is baking, bring pot of water with tiny bit of olive oil and sea salt. Add pasta and boil until al dente. Drain pasta. Return to pan, top with remaining marinade and mix well. Serve pasta with chicken breast.
