Number of Servings: 6


    6 Chicken Breasts, no skin, cubed
    *Chick Peas, 1 can (including liquid)
    Beans, black, 1 can (including liquid)
    Mixed Vegetables, frozen, 1 package mexican blend
    Del Monte Diced Tomatoes, No Salt Added, 1 cup
    Oregano, ground, 2 tbsp
    *Cumin seed, 1 tbsp
    Chili powder, 3 tbsp
    1 onion, chopped
    3 stalks celery, chopped
    olive oil cooking spray


Serves 6
Spray large pot with olive oil cooking spray. Saute chopped onions & celery until lilghtly browned. Add cubed chicken & saute until cooked through. Add mixed veggies (fresh or frozen) & saute until browned. Add remaining ingredients (do not drain beans), lower heat & cover, simmer for 15-20 minutes
