    2 ears fresh corn
    cup shelled edamame
    cup chopped red onion
    cup small-diced red bell pepper
    1 tablespoon finely chopped fresh cilantro
    1 tablespoon extra virgin olive oil
    1 tablespoon lemon juice
    1 teaspoons finely grated ginger
    1/8 teaspoon salt
    1/8 teaspoon freshly ground black pepper


Soak fresh corn in cold water for about 30 minutes. Grill corn in the husk for 10 to 15 minutes, turning once. Let cool. Remove husks. Cut corn from the cob into a bowl; combine with edamame, red onion, red bell pepper and cilantro. Blend together the olive oil, lemon juice, grated ginger, salt and pepper; drizzle over vegetables. Toss to combine. Cover and chill in the refrigerator until ready to serve.

Makes 8 1/2-cup servings
