Number of Servings: 12


    1 cup Bob's red mill unprocessed wheat bran
    1.5 cup gold medal all purpose flour
    0.6 cup Blueberries, frozen (unthawed)
    0.25 cup Almonds, whole
    1 tsp Baking Powder
    1 tsp Baking Soda
    1 cup Silk, Vanilla Soymilk
    0.5 cup Honey (or molasses)
    0.25 cup Mott's Applesauce, Cinnamon
    1.8 tbsp Canola Oil
    2 large Eggs
    1 tbsp Vanilla Extract
    1 tsp Cinnamon, ground


Yields 12 muffins.

Stir dry ingredients together.
chop nuts and blueberries, add to dry ingredient mixture.
Blend eggs and wet ingredients together in a large bowl.
Add dry ingredients to wet ingredients, and stir gently, so that the resulting mixture is lumpy.
Pour mixture into cupcake pan.
Bake 15-20 minutes at 400 F
