Ingredients

    10-12 springs cilantro, chopped
    1 small tomato, finely chopped
    1 cooked, chilled rotisserie chicken
    3/4 cup refried beans
    2 10-oz cans enchilada sauce
    6 10-inch flour tortillas
    1 1/2 cups Mexican-blend shredded cheese

Directions

Preheat oven to 350. Coat a 9-inch square baking dish with cooking spray. Chop cilantro coarsely, and place in a medium bowl.

Chop tomato and set aside.

Remove meat from chicken; discard skin and bones. Chop meat coarsely and add to cilantro. Stir in refried beans and 1 can of the enchilada sauce.

Spoon chicken mixture into center of tortillas. Roll the tortillas and place, seam side down, into the baking dish. Pour remaining enchilada sauce over top.

Sprinkle tomatoes and cheese over the tortillas. Cover the pan with foil and bake 15 minutes, or until heated through and cheese is melted.

Makes 6 servings.
