    *Wheat flour, white, all-purpose, unenriched, 4 cup
    Ginger, ground, 2 tsp
    Cinnamon, ground, 1 tsp
    Salt, 1 tsp
    Baking Soda, 4 tsp
    Applesauce, unsweetened, .5 cup
    Granulated Sugar, 2 cup
    Egg, fresh, 2 large
    Molasses, .5 cup

    granulated sugar for rolling


Sift dry ingredients together (flour, ginger, cinnamon, salt, baking soda). Cream applesauce, sugar, eggs, molasses. Add dry ingredients and mix well. Make into balls and roll in sugar. (use a baller rather than hands to roll consistent balls)

Bake at 325 for 12 minutes.

Makes about 4 dozen cookies

I haven't experimented with Splenda or stevia yet.
