    1.5 C Basmati Rice
    1 Large Onion
    3 Garlic Cloves
    1 Can of RoTel Tomatoes
    1 C of Beef Broth
    2 Cans of Pinto Beans
    1 Can of Corn
    1 Can of Mushrooms
    4-5 Tbsp of Chili Powder
    1.5 tsp Cumin powder


Cook the rice however you prefer. I use a microwave container made for cooking rice, on high for 10 minutes, then on defrost for 10-15 minutes. Chop the onions and garlic, then sautee. Add the spices for a minute. Add tomatoes, beef broth, beans, and corn and let cook till heated thru. Add mushrooms and mix in the rice. Serves 8-10
