    2 Boneless Skinless Chicken Breasts
    1/4 C Onion, chopped
    1/4 C Green Pepper, chopped
    1C Zucchini, thinly sliced
    1C Mushrooms, thinly sliced
    1C Tomatoes, peeled and diced


Place chicken breasts one at a time in a gallon size bag and pound until flat. This reduces cooking time. Place chicken in large hot skillet and cover. Turn once after 5 minutes. Add onion and pepper when you turn the breasts, replace cover for 5 minutes more. Add zucchini, mushrooms, and tomatoes. Cover reduce heat and simmer until zucchini is done. This makes 2 servings and you can serve it with rice or noodles if you like but this is a lot of food all by itself.
