Ingredients

    1 1/4 C Splenda
    1/4 C Unsweetened Applesauce
    2 Large Eggs
    3 Mashed Ripe Bananas
    1/2 C Buttermilk 2%
    1 tsp Vanilla
    2 1/2 C Flour
    1 tsp Baking Soda
    1 tsp Salt
    1 tsp Pumpkin Pie Spice
    1/2 C Chopped Pecans

Directions

Makes 24 Muffins or 2 loaves
Heat oven to 350. Spray pans with Pam.
Mix sugar and applesauce in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda, spice & salt until just moistened. Stir in the nuts. Pour into pans.
Bake loaves for about 1 hr or muffins for 15-20min. Wrap tightly and store at room temp for 4 days or refrigerate for up to 10 days.
