These delicious chocolate chip muffins are made with Ezekiel flour. These delicious chocolate chip muffins are made with Ezekiel flour.
Number of Servings: 24


    4 cups Ezekiel (whole grain) Flour, 2 cups Splenda Granular, 4 teaspoons baking powder, 2 teaspoons salt, 1/2 cup chocolate chips, 2 cups mashed bananas, 3 large eggs, 1/2 cup olive oil, 1/2 cup non-fat milk, 2 teaspoons vanilla extract.


Preheat oven to 375 degrees. Spray 2 - 12 cup muffin tins with Bakers Joy or Pam. Mix all dry ingredients together. Mix all wet ingredients together, then add to dry ingredients and mix just until smooth (do not over mix).

Spoon into muffin tins. Bake approximately 20 minutes or until tester comes out clean. Cool 10 minutes in pan then remove to cooling rack.

I freeze these in ziplock bags so a tasty treat is handy when I need it.
