    3 tbsp sugar or alternative (I used cane sugar)
    2 1/2 to 3 tbsp cornstarch, depending on desired thickness
    2 tbsp cocoa powder
    2 cups soymilk (I used Silk Light Plain)
    1 tsp pure mint extract


In a saucepan, combine sugar, cornstarch, and cocoa powder. Add soymilk and mint extract, giving a quick stir.

Place saucepan over medium heat and stir until the pudding begins to thicken. Your dry ingredients will not combine with the milk at first; have patience--as the liquid heats, the solids will mix in as long as you keep stirring. Thickening can take awhile, so don't worry that you've done something wrong--it will eventually behave!

When liquid has thickened, remove pot from burner. Continue stirring as the mixture cools or a "skin" will form. Refrigerate until set.
