    1 C plain corn grits
    4 C water
    1 tsp salt

    2 C mushrooms
    1 C diced zucchini
    3 garlic cloves
    1 medium onion, diced
    1 large green pepper, diced

    1 large jar of favorite marinara sauce (or make your own)
    12 oz ground beef or meatless crumbles
    2 C mozzarella


Preheat oven to 425.

Bring 4 cups of water and salt to a boil in medium sauce pan. When boiling, slowly whisk in the corn meal. Cook over med-low heat until thick, stirring continuously. Spray a 9X13 pan with cooking spray and spread 1/2 of corn mixture into pan. Set remaining aside.

While polenta is cooking, saute the vegetables in a couple of Tbs olive oil until tender crisp. Spoon 1/2 of vegetable mixture on top of polenta. Then add 1 C cheese, ground meat or crumbles, and 1/2 marinara sauce. Repeat with the rest of the ingredients, finishing with the cheese.

Bake for 20-30 minutes or until cheese is light brown and bubbly.
