Ingredients

    1 medium potato
    5 jumbo black olives, sliced
    1/2 TBS. olive oil
    2/3 cup (about half med.) green
    peppers, chopped
    1/2 jalapeno, diced
    1/2 medium onion, chopped
    2 oz./57g mushrooms, canned pieces
    1 link Amylu Andouille chicken sausage
    1/4 cup Classico, Mushroom & Ripe Olive
    2 oz. Cabot Reduced fat jalapeno cheddar
    cheese, diced


Directions

Makes 1 big serving.

Poke whole in potato and place in microwave. Cook until soft.
While potato cooking, cut up cheese, olives and sausage, then set aside.
Heat fry pan with oil.
Cut green pepper, jalapeno, and onions and open can of mushrooms.
Fry in oil until onions translucent.
While veggies are frying, cut potato in fourths the long way on large dinner plate.
Add the veggies on top of potato.
Add olives on top of veggies.
Add chicken sausage on top of olives.
Add sauce on sausage and top the mound with the cheese.
Microwave 2-3 minutes and enjoy.
