Introduction

So, we liked the chorizo black bean chili, but it's high in calories and fat. So here is a bison version substituting chipotle peppers for the bell peppers. If you don't like your chili spicy, you can use green chiles or sweet peppers instead. So, we liked the chorizo black bean chili, but it's high in calories and fat. Number of Servings: 6

Ingredients

    1 Tbsp olive oil
    1 lb ground bison
    1 (7oz) can chipotle peppers in Adobo sauce
    2 cloves garlic
    2 (15oz) cans black beans
    2 (14 1/2oz) cans Rotel tomatoes
    1 bottle stout or 2 cups beef stock
    1 Tbsp chili powder
    1 tsp ground cumin
    1 tsp oregano

Directions

Heat olive oil in a dutch oven. Add bison and saute until no longer pink. Add remaining ingredients and bring to a boil. Reduce to a simmer and cook until desired consistency. Makes 6 1-cup servings.
