Ingredients

100g skinless chicken breast (approx. half one side of a medium-sized breast)
half tspn granulated garlic
half tspn dried chilli flakes (or to taste)
half tspn black pepper
tspn sunflower oil
quarter cup jalapeno peppers, chopped finely
1 cup chopped mushrooms
quarter cup spring onion, chopped
quarter cup lemon juice
dash salt
Directions
1. Slice piece in half horizontally to make two thinner pieces
2. Coat chicken pieces in garlic, chilli and pepper
3. Heat oil in frying pan over medium-low heat and add chicken, turn quickly to coat both sides.
4. Cook chicken for 2.5 minutes each side, then add mushrooms, jalapenos and spring onions.
5. Stir until mushrooms are soft (approx. 5 mins)
6. Add lemon juice and salt, stir through then serve.
Makes 1 serve.
