Introduction

Ingredients

    2 Tbls Extra Virgin Olive Oil
    1 medium onion, chopped
    2 tsp garlic, minced
    1 1/2 tsp. red pepper flakes
    40 fresh cherry tomatoes or yellow pear tomatoes
    1 2 oz. can anchovies, drained and chopped
    1 Tbl. fresh parsley, chopped
    1 Tbl. red wine vinegar

Directions

Heat oil in skillet over medium high heat. Add onion and saute until translucent - about 3 minutes. Stir in garlic and red pepper flakes and cook 1 minute. Add tomatoes and cook 5 minutes. Add anchovy and wine vinegar and cook 5 more minutes or until liquid in pan gets syrupy. Serve over pasta or over shirakiri (tofu noodles) for a lower carb version. Serves 2
