Basic Mac & Cheese Basic Mac & Cheese

    One large onion diced
    Half a stick of butter
    1 cup whole wheat pastry flour (is a bit lighter than regular whole wheat flour)
    1.5-2 cups milk
    2 cups of sharp chedder cheese shredded
    1 cup ham steak diced
    1 package whole wheat shell noodles


This makes one 9"x13" pan and I have never had leftovers. Dice up the onion and put in a pot with about 1 tablespoon butter. Brown the onion until it caramelizes and then add the remaining butter. Once the butter is melted add the whole wheat pastry flour and mix with a spoon. It should form a paste. Turn down the temperature at this point so that the paste browns but doesn't burn. Add 1 cup of milk and stir. At first it will be lumpy and then it will smooth out and begin to thicken. Add remaining milk as mixture thickens. Now start adding the shredded cheddar cheese. Keep stirring throughout. Once the cheese is all added it should be a nice creamy color. Taste test at this point and add salt and pepper to suit. Add in the diced ham and take off stove. In 9"x13" pan place cooked noodles. Pour ham and cheese sauce over noodles and mix together. Bake at 350F for 45 min. It is done when the top is brown and bubbly with the top noodles being crusty around the edges of the pan. Goes great with steamed peas and green salad,
