Ingredients

    polenta, dry
    water
    salt
    blue cheese

Directions

Makes 2-1 cup servings.

Boil 2 c. water. Add salt then add polenta gradually, whisking briskly as you add to boiling water. Reduce to simmer and let polenta bubble gently for about 15 minutes until creamy. Add remaining 1/4 c. water as needed, if polenta is too stiff. Remove from heat. Add 1 oz. blue cheese and stir to distribute. Cover. Let rest 5 minutes. Stir to incorporate all cheese and serve hot.
