    4 large, whole eggs
    1 T cold water
    1 cup oven roasted veg's
    1 oz. fat free feta
    1 oz parmigianna reggiano
    2 tsp. olive oil
    Mrs. Dash original


Preheat oven to 350 F. Measure olive oil into 8 inch oven proof pan and heat over med heat. In a bowl, beat eggs till fluffy with 1 T water. Add oven roasted veg's to egg mixture and pour in pan. Using spatula, loosen edges as egg cooks and let runny portion fill in under so egg mxture cooks till nearly set. (Turn down the fire to med-low if it appears to cook too fast). Once egg mixtures is nearly set, sprinkle both cheeses and Mrs. Dash evenly across the top and place in preheated oven for 15 minutes. Cool slightly before cutting and serving. Serve warm or at room temp.
