    1 can Pink salmon
    1 egg
    1/2 cup panko bread crumbs
    1/4 cup each, red and green bell pepper
    1/2 cup chopped onion
    salt and pepper to taste
    juice of one lemon
    1/2 dill weed
    dash of tabasco sauce


Mix all ingredients well except olive oil and panko bread crumbs.

In a shallow dish place panko bread crumbs adding any seasoning you wish. (old bay is good), add 1 tsp of olive oil and mix. Using a 1/4 cup measuring cup form cakes, place cake directly from the cup into crumbs and lightly press and carefully turn to coat other side.

Bake at 400 degrees for 30 minutes flipping after 15.

Makes 8 cakes, 2 cakes per serving.
