    1.33 cups whole wheat flour
    1.33 cups all purpose white flour
    1 teaspoon salt
    3 Tablespoons brown sugar

    1 egg
    1 cup 2% (or less) milk
    6 oz. greek yogurt - vanilla
    3T butter (1/2 stick) or less

    .5 cup cooked steel cut oatmeal
    1.5 teaspoon vanilla extract
    1 cup water (give or take)
    1 Tablespoon baking powder


First cook some steel cut oatmeal as you'll need .5 cups for the recipe.

Mix all dry ingredients except baking powder.
That is - white flour, wheat flour, salt, brown sugar

Mix all wet ingredients separately.
That is -milk, yogurt, melted butter, then egg

Combine wet and dry ingredients - and add in 1/2 cup COOKED steel cut oatmeal and water (increase or decrease water for preferred batter thickness). Add baking powder and vanilla last and mix lightly. Cook. Toss in a handful of fresh or frozen blueberries after pouring batter and before it sets too much.

Makes 4 cups of batter, give or take. That comes to 16 if you use .25 cup batter or 12 if you use .33 cup batter. We had 8 with about a cup to spare, but they were all pretty large and good thickness.
